Destin sells about a dozen different ways to get on the water, and in late August the difference between a great day and a mediocre one is almost entirely a scheduling decision. For the weekend of August 22-23 - school back across the Southeast, water still in the mid-80s, availability loosened considerably since July - here is what I would book, in what order, and at what time.
The one rule that governs everything
Book mornings. Late-August mornings on the Emerald Coast are flat, clear, and comparatively cool. The sea breeze fills in through the late morning, the bay picks up a one-foot chop by early afternoon, and convection builds between roughly 2 and 5pm nearly every day before clearing inside an hour or two.
That single pattern determines which activities are worth booking when. Anything that depends on flat water - jet skis, parasailing, dolphin tours, tiki boats - is dramatically better before 11am. Anything where you are anchored and swimming survives the afternoon fine.
Sunset is just after 7:15pm, which makes the 5:30 and 6pm cruise departures the second-best block of the day after the early morning.
Saturday, August 22: parasail early, pontoon after
Parasailing is the most weather-sensitive thing on this list and the first to get cancelled when the wind comes up, so take the first flight of the day. Expect roughly 85 to 120 dollars per person for a single flight, with tandem and triple rides priced per person and observers often riding along for a reduced fee.
Then move to the water for the rest of the day. A half-day pontoon from late morning gets you Crab Island with real anchoring room - the biggest single change since July, when the sandbar is genuinely crowded. Standard 10 to 12 passenger boats run about 350 to 450 dollars for a half day.
If you would rather cover water than sit on it, swap the pontoon for two hours on jet skis at roughly 100 to 140 dollars per hour per ski. Same rule applies: earlier is better, and the second hour is usually discounted.
Sunday, August 23: dolphin tour and a sunset cruise
Sunday mid-morning is the quietest block of the weekend and the right time for a dolphin tour. Dolphins work the pass and the bay edges early, boat traffic is at its weekly low, and shared tours typically run 40 to 60 dollars per adult for 90 minutes to two hours.
Then close the weekend with a sunset tiki or cruise departure. Two-hour shared cruises generally run 45 to 75 dollars per person, and the light over Choctawhatchee Bay in late August is the best of the season. Private charters land in the 550 to 900 dollar range for two hours and become the better value at around eight people.
Arrive 20 minutes early for sunset departures. They leave on schedule because they are chasing the light.
What is actually available right now
Almost everything, which is the point. Standard pontoons and jet skis need one to two days of lead time this weekend versus five to seven in July. Shared dolphin tours and morning cruises frequently have same-day space. Parasailing books quickly on Saturday morning because everyone wants the same first flight.
The exceptions that still sell out: Saturday full-day pontoons, anything with a slide, and Saturday sunset private charters. Book those three to four days ahead.
The tactic worth knowing: check availability between 7 and 9am. Overnight cancellations get reposted then across nearly every operator in town, and that is how people end up on a Saturday boat with a Friday phone call.
What I would skip
Skip anything scheduled between 1 and 3pm. It is the hottest, choppiest, most cancellation-prone window of the day, and it is the block with the most openings for exactly that reason.
Skip booking a one-hour jet ski if you have never ridden. The briefing and the settling-in eat a third of it.
Skip stacking three activities into one day. Destin heat in late August is genuinely taxing, and the third booking is the one everybody ends up resenting.
Is the weekend of August 22-23 a good time for watersports in Destin?
It is one of the better weekends of the year. Southeastern schools went back in early August, which pulled a large share of family traffic off the water while conditions stayed effectively identical to July. Rentals that needed five to seven days of lead time are now bookable one to two days out, operators repost same-day cancellations between 7 and 9am, and Crab Island has real anchoring room again. Book mornings and stay clear of the 2 to 5pm storm window.

Which activity is best for young kids?
A pontoon anchored on a sandbar, by a wide margin - shade, room to move, and the ability to leave whenever the mood turns. A shared dolphin tour is a good second choice at 90 minutes. Parasailing has minimum weight requirements that rule out most small children, and jet skis have a minimum operator age of 14 in Florida.
What happens if the weather cancels my booking?
Operators generally reschedule or refund when they cancel for weather, and generally do not when you cancel late yourself. Parasailing is the most cancellation-prone activity because it is wind-limited. Late-August cells build between 2 and 5pm and typically clear inside an hour or two, so a morning booking removes most of the risk.
The bottom line
Book Saturday's first parasail flight, follow it with a half-day pontoon or two hours on jet skis, take a Sunday morning dolphin tour, and finish with a sunset cruise. Book everything before 11am where you can, keep the 2 to 5pm window clear, and use the 7 to 9am cancellation reposts if the slot you want looks full. This is the easiest booking weekend since spring.
